Vegan pancakes

jiffiesMy American husband makes pancakes with the kids on Sunday mornings. There’s nothing dainty about them – they’re hearty corn cakes. Tom’s family use Jiffy corn muffin mix to make pancakes (known as Jiffies). This recipe is a vegan adaptation of the classic Hall family Jiffies.

Ingredients
1 cup plain flour
1/2 cup medium cornmeal (or polenta)
8 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
2 tbsp vegetable oil
2 heaped tbsp silken tofu
2 heaped tbsp flaxseed
6 tbsp water
3/4 cup almond milk

FullSizeRender (32)Combine dry ingredients in a bowl. Mash tofu in a cup, then add flaxseed and water and stir together to form a paste. Scrape all this into the dry mixture. Pour in the vegetable oil and almond milk. Beat with a hand beater for a minute or two.

Cook pancakes on medium heat in a large frying pan in vegetable oil of your choice. We usually use sunflower. Serve with dairy-free butter, jam, maple syrup and berries.
